Dover Soles

Solea Solea

This fish is being caught in the north eastern part of the Atlantic Ocean all year round and is at it thickest between September and December. Foodies all over the world price its soft, buttery taste.

Turbot

Psetta Maxima

The turbot is bigger and thicker than the Dover Sole, but with a similar taste, it ends up as filet in most restaurants. This species has the same cycle in which it grows row after December.

Brill

Scophthalmus Rhombus

Like the turbot but has a rounder form. Like all flatfish, these starts mating in the spring. Taste and nutritional values are quite the same.

Red Gurnard

Triglia lucerna

The name says it all: bright red. This fish 'walks' across the seabed with its belly-fins, searching for food. Found all year round in the eastern part of the Atlantic Ocean.

Red Mullet

Mullus surmuletus

A real treat on the grill. In the summer there is a big demand for Mullets from Greece. Fileted of whole; it's a delicacy. Supply all year round.

Squid

loligo vulgaris

Squid (calamaris / calamari) is just from Holland as well and is caught in the southern part of the North Seas from November till March. High demands from Southern Europe. Fresh they're almost see through.

Cuttlefish

Sepia officinalis

This fearless hunter prowls the seagrass fields. Very recognisable by their round back-shield. Cuttlefish is a good alternative for squid and is prepared roughly the same way.
